Cherry Coconut Bars





Ingredients
230g all-purpose flour
115g margerine, softened
3 tablespoons icing sugar
2 eggs
230g granulated sugar
60g all-purpose flour
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
170g almonds, chopped
115g coconut, flaked
115g cherries, chopped


Method
- Preheat oven.
- In the meantime mix 230g flour, margarine and icing sugar.
- Press in greased baking pan and bake for 10 minutes.
- Beat eggs and stir in remaining ingredients.
- Spread over baked dough layer and bake until golden brown (25 to 30 minutes).
- Cool and cut into bars.

Date Bars





Ingredients
230g sugar
2 eggs, well beaten
230g flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla
350g dates, pitted & chopped
230g walnuts, chopped
Icing sugar


Method
- Slowly add sugar to eggs and beat well.
- Add flour, sifted with salt and baking powder, and beat until smooth.
- Stir in vanilla and add dates and walnuts. Fold these into the mixture.
- Pour into a greased pan and bake for about 30 min.
- While warm cut into bars and roll in icing sugar.

Feta Stuffed Tomatoes





Ingredients
tomatoes
feta cheese
dried basil
chilli flakes
garlic flakes
breadcrumbs


Method
- Cut the tomatoes in half and hollow them out
- Sprinkle their bottom with chilli flakes and basil
- Fill with feta cheese
- Top up with basil, garlic flakes and breadcrumbs
- Place in oven for 15 to 20 minutes

Spaghetti With Meat Sauce





Ingredients
spaghetti
ground beef
tomato juice
chilli flakes
thyme


Method
- Saute the ground beef together with chilli flakes and thyme
- When beef is browned add the tomato juice and stir over low heat
- Cook the spaghetti and remove the water
- Add spaghetti to the sauce and stir well

Low Fat Chicken Curry





Ingredients
rice
boneless chicken
hot curry powder
extra light evaporated milk


Method
- Cut the chicken into small pieces and cook in a skillet
- Meanwhile boil the rice and remove the water
- Add to cooked chicken together with hot curry powder and evaporated milk
- Stir on low heat until no liquid remains

Seafood Risotto




Ingredients
rice
mixed seafood pieces
fish cube
tomato juice
grated parmesan
garlic flakes
basil flakes
cayenne pepper


Method
- Saute the seafood together with the garlic flakes, basil flakes and cayenne pepper
- Meanwhile boil the rice but leave it a little undercooked
- Remove the water and add the rice to the seafood
- Melt the fish cube in hot water and add to the rice
- Add tomato juice and grated cheese
- Still until no liquid remains

Spaghetti With Mushrooms, Spinach & Cherry Tomatoes




Ingredients

spaghetti
mushrooms
spinach
cherry tomatoes
light cream
garlic flakes
cayenne pepper


Method
- Saute some chopped mushrooms & spinach .. I use cooking spray but if you're not weight conscious, garlic butter is better
- Add some garlic flakes & cayenne pepper (optional)
- Meanwhile boil the pasta
- Cut up some cherry tomatoes in half or fours
- Remove water and return pasta to skillet
- Add all other ingredients plus some light cream
- Stir on light heat until everything is distributed evenly
